If you are crazy about desserts, this is a Parisian patisserie you really, really do not want to miss. Let us meet in the Latin Quarter to go on the discovery of chef Carl Marletti’s delicious creations. In this indulging temple, both sober and elegant, pastries eye at us and the choice is very hard.
But careful though, when stepping in Carl Marletti’s universe, do not expect to see things you have already seen before. Here, even the greatest French pastry classics are revisited by the chef’s know-how who trained in the most prestigious houses in town, from Maison Lenôtre to the iconic Café de la Paix. As an outcome, the experience is filled with flavors, different textures leaving us addicted.
Among the patisserie’s best-sellers, there is the framboisier covered in a fine layer of marzipan to refresh the taste buds with an explosion of softness and fruity flavors. The mille-feuille, the Mont-Blanc, and the Paris-Brest Carl Marletti style are staples as well.
The pastry chef’s original creations are also worth the trip. Our favorite ones? The very tasty Carioca based on coconut shortbread, coffee crémeux, peanut praline heart with coconut milk and lime emulsion, and the Plume, a creation as light as its name suggests it (Plume meaning Feather), based on moist almond cake, Madagascan vanilla mousse, and vanilla crémeux flavored with Tonka bean.
Here, Carl Marletti wants you to enjoy his very indulging creations without making them feel heavy, he wishes to provide you with light but flavorful pastries. The balance of flavors is really precise so that you can make sure your tasting session is close to perfection.
