호텔 드 크리용은 탑 셰프에서 대중에게 널리 알려진 미쉐린 스타 셰프 폴 파레를 초청해 Place de la Concorde의 궁전 한가운데 위치한 브라asserie d'Aumont를 Nonos et Comestibles와 함께 전면 재구성하기로 했다.
