Yule log 2019 by Matthieu Carlin for Hôtel de Crillon

For Christmas 2019, Hôtel de Crillon came up with a beautiful yule log inspired by funfairs and created by the brand-ne pastry chef, Matthieu Carlin, to discover from December 1, 2019 to January 10, 2020!

Inspired by funfairs, this yule log 2019 by Hôtel de Crillon named “Le Carrosse de Noël” [Christmas Coach] is shaped like a lovely merry-go-round piece with wooden horses and a small pink coach.

Behind this creation hides pastry chef Matthieu Carlin who joined Crillon kitchen not a long time ago!

This yule log mixes dark 66% chocolate mousse and red grapefruit jelly which bitterness is soften by the sweetness of the vanilla madeleine cake holding a crunchy cocoa and fleur de sel mix.

As for the rest of the structure and the horses, they are molded in dark and white chocolates because of course, everything on this original and childish yule log is edible!

This lovely yule log is available, to take away, at the Boudoir, Hôtel de Crillon pastry store from December 1, 2019 to January 10, 2020.
