For this Christmas 2020, Hôtel de Crillon pastry chef Matthieu Carlin takes us to the universe of Perrault's tales with a yule log, that may look ordinary, but that is filled with many ornamentations that are unveiled to "spectators" step by step, yes, the meticulousness of the creation, the fineness of the detail and the artistry of the elaboration of this yule log is a masterpiece.
On the front, the chef has created a "gate", a bit mystical, leading to the fantastic universe of enchanted tales, an invitation to taste. As the lateral sides are filled with many details dear to the author. Will you be quite capable of finding Cinderella's glass slipper, Puss in Boots, the Fairies, and even Little Red Riding Hood?
Moving on to flavors, the chef wanted a pastry with an evocative name reminding us of Charles Perrault's tales right away. The forest being THE common point in every story of the storyteller, the Pastry chef has decided to create a delicious "Forêt noire enchantée" that is very light and where Morello cherries perfectly pair vanilla, and almond-chocolate cake topped with chocolate crémeux for many flavors in the mouth.
Furthermore, this black forest is made on the top part and represented by lovely green fir trees separated by a little river leading to the heart of the forest where stands a chocolate keep reminding us of Little Thumbling and Sleeping Beauty.
In other words, the chef offers a very simple yule log that is all about nature, with simple flavors enjoyed by all. A not too sweet dessert, without fuss, that is simple and refined, ideal to close a quite heavy Holiday meal.
This lovely yule log is available, to collect at the Boudoir, the Crillon hotel pastry store, from December 19, 2020 to January 2, 2021. Do not forget to pre-order your yule log from December 17 on the hotel website at least 48 hours in advance.
