For those who want to transform their breakfast into a moment of pure greed, in these dark times, Moïse Sfez, the chef of Homer Lobster in Paris, reveals to you, step by step, the recipe of his breakfast sandwich.

Recipe of the breakfast sandwich of Moïse Sfez

Ingredients:

A bun burger or brioche bun
2
eggs
A knob of butter
A tablespoon of liquid cream
1/2 sliced avocado
1pineapple tomato
A handful of fennel alfa
2tablespoons of Russian sauce
1lime
1handful of chopped spring onion
Salt, pepper

For the Russian sauce:

1 tablespoon ketchup
1tablespoon mayonnaise
1/2 chopped sour pickle
1teaspoon pickle vinegar
A few drops of hot sauce (Sriracha or Tabasco)

Preparation:

Prepare the Russian sauce by mixing all the ingredients.

For the omelet, beat the eggs with the fresh cream, lime zest, spring onion, salt and pepper. Mix well to obtain a foamy and airy mixture.

Pour the mixture into a heated frying pan with a small knob of butter.

Once the omelet is cooked underneath, slightly crispy, fold it in two and let it cook covered over low heat, you can add some cheddar cheese to finish.

Toast the brioche bread in a pan with a knob of butter.

Recover the bread and spread with the Russian sauce, in order, on the bottom part, arrange the sliced avocado, one or two slices of pineapple tomatoes (or other tomato), the omelette and a little fennel, close the sandwich, it's ready!
