Just a stone's throw from the Château de Chantilly and the Grandes Ecuries, nestles the historic Auberge du Jeu de Paume, a Relais Château ideally situated on the edge of the Château Gardens? So it's only natural that the chefs drew inspiration from the gardens to create their 2019 Yule Log.
Indeed, for its Christmas creation, the Auberge pays tribute to the cultural heritage of the place and offers us its graphic interpretation of the"Jardins de la Volière". This pretty creation with its vegetal accents is in fact a replica of the parterres at the entrance to the Château de Chantilly, designed by landscape architect André Le Nôtre.
Carole Lesquer 's interpretation is gourmet, light, fresh and low in sugar. It's a harmonious blend that's sure to round off a hearty New Year's Eve.
This Yule log features a marjoram-infused mousse, pan-fried pear, caramel-chocolate cream and a crispy cookie. We love the sweetness of the chocolate-caramel, which doesn't overpower the freshness of the pear and the surprising taste of marjoram.
