Behind this name lies a galette based on a puff pastry created especially for Le Bistrot de la Galette.

Made from rye flour, it is set with delicate candied orange, grapefruit and citron peel.

To balance this touch of acidity, a generous traditional almond cream, awakened by a touch of old Trinidad Rum, garnishes this resolutely airy puff pastry.
