Butard Paris' galettes des Rois

Butard Enescot, France's luxury hotel and restaurant group, brings us its Galettes des Rois for the first time this Epiphany 2023.

Created and imagined by the group's head pastry chef, Cédric Charles Hélène, the galettes come in two flavors. These include La Nuit d'Abeille and L'Historique.

La Nuit d'Abeille, as its name suggests, is inspired by the world of bees, with ingredients such as buckwheat honey, pear and Tonka bean. This galette des rois features an inverted puff pastry for a light, fluffy texture.

L'Historique, on the other hand, is the more traditional option for lovers of frangipane cream. It's made with inverted puff pastry and topped with a beautiful layer of roasted and caramelized almonds that add a lovely crunch to the whole.
