Behind Healfy is Alfredine, an Audonian woman who launched her brand of cakes and pastries in September 2022. Affected by an autoimmune disease, she decided to stop her medical treatment and eat healthier, limiting dairy products and gluten, which cause inflammation. So she launched Healfy, short for "healthy" and Alfy, her nickname. Since then, she's been offering her recipes for lemon cakes, pistachio cakes, brownies... that are as healthy as they are delicious. Always decorated with her trademark sugar flowers.

Her galette, which we discovered last year, returns this year in a more generous format. For this royal delight, Alfredine has created a cake containing no less than 90% organic ingredients, including a maximum of French products and no refined sugar. As a gluten-free recipe, there's no puff pastry - no, it's more like an almond cake! In the style of a moelleux à la frangipane, Healfy 's galette des rois blends traditional frangipane cream (a mixture of pastry cream and almond cream) into a melting, dense and truly generous cake.
