Rayonnance, we’ve already mentioned it! It’s the must-visit pastry shop making waves in the 9th arrondissement of Paris. Behind this sweet gem are Yuki Hayato and Lumi Hachiya, two talented Japanese pastry chefs. Their partnership began in 2018, in the kitchens of the Michelin-starred restaurant Pages, sparking a shared culinary journey. After winning over connoisseurs during a residency at Bistrot Pergo, they opened their first spot in 2023, Rayonnance. Here, Yuki works away in the kitchen, while Lumi welcomes guests with a warm smile—refreshingly free of the pretentiousness often associated with luxury pastry shops.
For the 2026 edition, Yuki presents a reverse puff pastry filled with a rich frangipane cream infused with a hint of rum and flavored with Madagascar vanilla. Each galette is hand-embossed with intricate patterns by Yuki himself, showcasing his passion and love for his craft. Did you know that the designs on the Epiphany cakes carry symbolic meanings? Spiral lines represent continuity, eternity, and the cycle of time. Crosshatch patterns symbolize unity, sharing, and equality. An ear of wheat signifies prosperity and harvest abundance, while laurel leaves embody victory. Beautiful, isn’t it? Every one of these motifs is carefully etched into Yuki’s detailed decorations.
With its porcelain fève and custom origami crown, this galette is as stunning as it is tempting. For collectors, Rayonnance has selected delectable fèves this year that will delight both young and old alike.
Please note that supplies are limited, and it’s highly recommended to reserve your galette in advance. The bakery has scheduled multiple pick-up days throughout January 2026. Here are the available dates:
The available time slots are: 12:00 PM, 1:30 PM, 3:00 PM, 4:30 PM, and 6:00 PM.
Two options are available: €42 for a 6-slice galette and €65 for a 10-slice version. This investment is well worth it, given the incredible quality of the ingredients and the meticulous artisanal craftsmanship involved.
In a short amount of time, Rayonnance has become a go-to spot for those with a sweet tooth, thanks to its knack for putting a refined twist on classic treats. Their galette des rois is the perfect example, each bite a reminder of why this bakery lights up the 9th arrondissement of Paris. If you're after a galette that breaks the mold, head straight to Rayonnance—don’t miss out!
