Chilam: the capital's excellent Mexican gastrobar - Permanently closed

How about a wonderful immersion in the land of the Mayas? Would you like to experience an incredible culinary escape to Mexico without leaving the capital? Then head to the Marais district to push open the doors of Chilam Gatrobar and discover its succulent tacos, acclaimed by even the most discerning connoisseurs! Look out, folks, for a new Chilam on rue Brissac, near Bastille.

There are many restaurants in Paris dedicated to world cuisine. Italian, Japanese, Chilean, Mexican... Parisians don't have to travel far to find what they're looking for. But finding THE restaurant that makes the difference, that has that extra something that transports you to the country you've been longing for, is no easy task.

For all lovers of Mexican cuisine, we invite you to discover Chilam as a matter of urgency. Behind this name, a reference to the Chilam Balam, the famous indigenous manuscripts written after the Conquest, lies a cheerful duo made up of Juan, originally from southern Mexico, and Lucia, who hails from southern Italy. It all began for them with the launch of a food truck on the streets of the capital. Then, in 2017, it was the consecration with the prize for the best tacos of the year awarded at the Que Gusto Festival.

Following this success, the two acolytes decided to bring their Mexican-inspired gastronomic recipes to the heart of Paris. And it's at N°12 rue des Ecouffes, in the Marais district, that this pretty and colorful little shop is to be discovered. In a relaxed, friendly atmosphere, customers flock here to savor the house's succulent tacos.

Our signature taco is the " Al Pastor " lobster prepared withAxiote (a Yucatan spice) and Chipotle (pickled jalapeño), enhanced by a touch of Tequila and roasted pineapple!

There are six other tacos to discover, including the " Barbacoa de Pato ", made with duck simmered and flavored with Mexican spices and served with guacamole, or the excellent and surprising " Cochinita Pibil ", with pork marinated for 24 hours in a roucou-based preparation, shredded and cooked at low temperature... All to be enjoyed wrapped in a delicious, thin tortilla made from organic Mexican corn!

For vegetarians, opt for the " Frijolitos Refritos " with a creamy Mexican purée of organic black beans served with fromage frais and avocado.

For those in a hurry,Chilam also offers the famous pork, lobster or vegan burritos.

And, in keeping with Mexican cuisine, Chilam also offers plates to share, including the must-try guacamole with an excellent black bean purée, or quesadillas (homemade wheat tortillas topped with cheese and avocado and flavored with Chipotle pepper).

And to accompany these tasty dishes, customers can quench their thirst with cocktails such as the " Beso Mortal " (Mezcal, hibiscus, chilli, cinnamon, rosemary and sugar) or beers such as the excellent Cucapa craft Mexican beer.

More than just a place to eat, Chilam is a place where regulars enjoy meeting up and chatting with the managers, who are always available and always smiling!

In short, mouth-watering explosions, discoveries of hitherto unknown flavours, conviviality and good humour... This is the recipe for success to be discovered at Chilam, which is continuing its ascent. As proof, Chilam has taken over Ground Control at the Halle Charolais in Paris, and will also be opening another address near Bastille in February 2018.
