EphemeraGroup has set itself the challenge of offering restaurants designed around a specific theme, with spectacular scenery and projections. It's a concept that can already be found in other countries, but which is now available in an accessible and affordable way.
Behind Ephemera is a power trio. Annaïg Ferrand, Loris De Vaucelles and Jade Frommer, freshly graduated from the Institut Paul Bocuse, decided to launch their first ephemeral immersive restaurant in 2019 for a weekend in Lyon. An immediate success, it was followed by the installation of a second immersive ephemeral restaurant, also quickly filled to capacity. Thus was born the desire to create theEphemeragroup with the aim of unveiling several immersive restaurants.
This is how Paris' first immersive restaurant came into being. It awaits you in a hidden room of the MK2 Bibliothèque in the 13th arrondissement, to take you under the ocean!
Under the Sea by Ephemera is the name of Paris' first immersive restaurant. From the tables to the animated floor, from the vegetation to the corals on the ceiling, we dive 20,000 leagues under the sea. In a 700 m2 space with a hundred or so seats, we discover panels dotted with projections throughout the room, revealing different tableaux that evolve throughout the meal. The aperitif begins with whales, the starter is accompanied by the fabulous fauna of the colorful reefs, the main course by sharks and the dessert by beautiful, bewitching jellyfish. The finale is an explosive, rhythmic tableau.
The restaurant is open for lunch and dinner. Young associate chef Loris de Vaucelles, who has worked in the kitchens of Thierry Marx and Sylvestre Wahid, and his 20-strong team offer local, seasonal cuisine. The fish, the stars of his plates, are all from sustainable French fisheries. Next to the restaurant, the immersive bar awaits you for a drink, while enjoying tapas also designed around the theme of oceans, of course... The menu is affordable for this kind of concept. Indeed, lunch or dinner in sumptuous animated settings already exists abroad, but these are concepts where the wallet often undergoes a slimming cure.
During our visit, we sampled recipes designed to transport us to the depths of the sea. After an amuse bouche of leek and seaweed, we were seduced by salmon trout in gravlax, pickled samphire and celery with tarragon emulsion.
The main course features grilled sea bream marinated in fennel seeds, accompanied by a surprising cannelloni of eel and beet. The whole dish is topped with a buttery beet sauce.
To finish, we present a lovely dessert combining lemon gel, confit, mousse and citrus ice cream, meringue and grapefruit supremes, and a small lemon madeleine to finish.
In short, a surprising and atypical concept for a fine culinary experience in Paris. And if that's not enough, Ephemera now has a second Parisian address in the 11th arrondissement: Stellar. This time, we're taken to infinity and beyond for a meal with our heads in the stars!
