GEMÜSE, a recipe constantly perfected since 2018
When he opened GEMÜSE in October 2018, Noé Lazare's aim was simple: to offer the best kebab possible, to as many people as possible. GEMÜSE's recipe has since become legendary, drawing gourmands from all over Paris and the surrounding area: a delicious spit of homemade marinated chicken before each service, an avalanche of crudités, juicy grilled vegetables, fresh cheese, fresh herbs, and of course a beautiful choice of finger-licking homemade sauces. All filled with warm pide bread prepared each morning by the baker, lightly crusty on the outside and soft on the inside, or in an excellent dürüm.
Always driven bya love of taste, the GEMÜSE team has never ceased to perfect its recipe over the years: ever more addictive marinade, new sauce recipes, sandwich balance, meat cutting, spit making etc...
Alongside its "Classic" recipe, GEMÜSE also stands out for its wild creativity, proposing a new recipe every month inspired by a different culinary culture: Vietnamese, Malian, Iranian, Thai, Moroccan kebap... more than 28 recipes have now been created by the Chef, who is constantly on the lookout for new flavors.
To accompany your sandwich, let yourself be tempted by the incomparable spice and vegetable fries, always to be dipped in your favorite homemade sauce (garlic, white, harissa, Algerian, etc.).
GEMÜSE, a kebab for everyone
GEMÜSE is neither a luxury kebab nor a gourmet kebab. The manager believes that eating fresh produce, cooked with love and in beautiful proportions, should be accessible to all. The kebab, seen here as a complete dish in view of its composition, is priced at €8, €7 in its vegetarian version. The aim is to appeal to everyone, while remaining accessible and respecting the original positioning of the kebab: while never sacrificing taste, quality and homemade ingredients. A successful gamble, as evidenced by the long queues that form at lunchtime and in the evenings in front of the little store.
In addition, there are formulas to suit all tastes. Two vegetarian options are available: the vegetarian, featuring grilled vegetables, and the halloumi, featuring this soft Cypriot cheese. Each recipe is available in fresh sesame bread, a bowl (like a plate) or a dürüm.

GEMÜSE is also a neighborhood story. A veritable institution on rue Ramey and in the 18th arrondissement of Paris, the restaurant has remained faithful to its home district for the past 4 years, and strives above all to serve the best kebabs possible to local residents. Many customers also travel across Paris to try GEMÜSE's recipe, as well as many tourists wishing to try this restaurant recommended by guidebooks.
Today, the team is an integral part of life in the neighborhood, and knows most of the regulars' orders by heart.
GEMÜSE, the first Berlin kebap in France
Yet in 2018, the challenge was huge. By opening France's first "Berliner" kebab, GEMÜSE was taking the risk of introducing the French to a kebab recipe inspired by the best of Turkish and German tradition, and much more garnished with vegetables than a traditional kebab. The traditional "salad, tomato, onions" was joined for the first time by peppers, red cabbage, feta cheese, eggplants and fresh herbs.
Often imitated since then, GEMÜSE has remained faithful to its vision of the sandwich, and has never ceased to delight the many gourmets who flock to its premises every day.
