In Germany, and particularly in Berlin, kebab is a veritable institution and a true multicultural product. It was invented in 1972 by Kadir Nurman, a Turkish exile in Berlin who realized that serving meat in bread was a real time-saver for Germans.
Arriving in France in the decades that followed, the kebab was transformed over the years, embellished with American flavors - ketchup and mayonnaise - but also with ingredients from the various countries it has crossed. Today, the classic French kebab formula is based on the indestructible salad-tomato-onion trio, but for several years now, Parisian restaurants have been aiming to return to the essence of the Berlin döner kebab.
In Berlin, the traditional kebab consists of carefully spit-roasted meat, Greek feta cheese and, above all, a whole host of fresh vegetables - eggplants, zucchinis, peppers, red and white cabbage, red onions - topped with lots of fresh herbs such as parsley, mint and coriander. In short, nothing like the rickety kebabs you can sometimes find in Paris!
And when it comes to sauces, count on Kräuter sauce (fine herbs), Knoblauch sauce (garlic) and Scharf sauce (hot), rather than mayonnaise, ketchup, samurai sauce or Algerian sauce! All that's left is to decide whether you prefer French-style kebab or Berlin-style kebab!
