Ginsburger Vegetarian Superstar, the kick-ass veggie burger restaurant

In the heart of the Saint-Paul district, on the corner of Rue du Roi de Sicile and Rue de Ferdinand Duval, Ginsburger Vegetarian Superstar serves burgers, fries, salads, specialty coffees and homemade cakes all day long.

David Garbi, the founder of Ginsburger, brought the concept back with him after a trip to London: a vegetarian for many years, he had the idea of creating his own vegetarian burger joint, while turning a meatless burger into a gourmet, comforting and generous product. So, for the past year, he has launched Ginsburger Vegetarian Superstar with his brother René, offering truly gourmet recipes for a lunchtime treat.

Ginsburger's vegetarian steak is a secret recipe, which the restaurant has long worked out with a laboratory, to give it a unique taste, achieved with various marinades. Here, everything is homemade: from the sauces prepared on site, to the vegan cheeses and desserts. "It's important to me that all our products are French," says David. So, choose from the Hot as Hell, delicately spiced with homemade hot sauce, the Classy with white truffle cream, Portobello mushrooms and alfafa sprouts, the classic Ginsburger or the Holy Smoked with smoked vegan cheese. Expect to pay between €10 and €13 per burger, bearing in mind that advises you to opt for a side dish.

The fries are David Garbi's business, as he says: "Fries are a priesthood. We do double fries, triple fries...". Yes, at Ginsburger, fries are an art form, and you'll quickly realize it when you see the gourmet offerings on the menu: full fries served with a mountain of veggie cheddar, bacon and pickles, truffled fries with veggie parmesan or the classic plain fries, for purists.

The savoury menu is 100% vegetarian, the cheese is made from a blend of oat and coconut milks, there's no meat or fish, just a little egg yolk to brown the brioche burger buns: and even then, the restaurant reserves buns without egg yolk every day for allergy sufferers or vegans.

On the sweet side, the menu is not vegetarian (the cakes contain butter and eggs), but everything is - once again - homemade, on the spot, and with passion. So, we suggest you set your sights on the soft banana bread, one of the chocolate cookies, the carrot cake... All accompanied by a chai latte that smells deliciously of cinnamon, or a good cup of coffee!
