Provence inspired many chefs. This year, this famous French region inspired chef Thierry Marx and Meilleur Ouvrier de France Joël Defives from the Boulangerie Thierry Marx.
The two partners in crime got inspired by famous Provencal traditions to create the “Bûche Cali Soun” (Bûche means yule log in French and Cali Soun is a pun coming from the French candy “calisson”).
Behind this unique creation and under an immaculate icing hides a delicious cake based on candied melon, crispy almonds at the heart of a very smooth mousse.
Calisson flavors unquestionably explode in the mouth!
For the record, several pastries enhancing the flavors of the 13 desserts are also to be discovered in small portions at the Boulangerie Thierry Marx.
For the Holidays 2017, seasonal breads are also offered.
