It is a time of the year gourmands are impatient about. Like for every Holidays, yule logs are about to proudly sit on your tables no matter if they are exotic, classic or even original. This year, hotel The Westin Paris-Vendôme team and especially pastry chef Florence Lesage, executive chef David Réal are back to basics: family. If there is one thing this difficult period has taught us, it is that family remains vital.
For this Christmas 2020, the Holidays take you back to your childhood. Therefore, we discovere a superb hobby horse and the famous little wooden cubes to pile up. At first sight, we cannot even notice this is pastry so much it is incredibly made. And we owe it to chocolate and fondant looking like a genuine structure made of wood.
What is inside? Note the little cubes are delicious entremets covered in fondant. They are made of pecan nut crunch, praline and puffed rice, as well as deliciously moist orange tree honey madeleine cake. Softness and Lightness are brought by the caramel crémeux and the Madagascan vanilla semolina pudding mousse.
The yule log tastes very soft and marvelously mixes flavors from our childhood, we love it. Both indulging and light, it will beautifully end your festive meal and looks amazing as a centerpiece to bring some magic to the party.
