For the Holidays 2018, Pastry chef Nicolas Bernardé makes us travel and offers us three yule logs tasting as good as they look!

Pastry chef and Meilleur Ouvrier de France Nicolas Bernardé reveals his new yule logs for the Holidays 2018!

All in all, three yule logs to be discover with different designs and flavors inviting to travel. From China to Namibia without forgetting Ireland, each stop promises us a feast for the eyes and the taste buds!

Giant’s Causeway yule log – Northern Ireland
Flavors: Apple – Caramel
Behind this yule log, we discover an almond, hazelnut and chocolate brownie, a salted butter and vanilla caramel, generous apples delicately caramelized like in a Tarte Tatin and a Rubinette apple mousse. To enhance the whole, on the top of the yule log, a hazelnut gianduja hazelnut chocolate bar that looks like the Giant’s Causeway.

Red Beach yule log – Panjin, China
Flavors: Raspberry – Litchi
This yule log is made of a soft almond cake hiding a raspberry compote with litchi chunks. To top it all, the dessert reveals a litchi mousse and lime zests and a raspberry chocolate bar.

Namib yule log – Namibia
Flavors: Chocolate – Orange
Inspired by a picture of the Namib considered as the oldest desert in the world, this yule log is made of a ganache topping a soft chocolate cake, a citrus fruit jelly and orange segments. Finally, a chocolate mousse brings some lightness and greed.

Note that these three yule logs are gluten-free. Each yule log is accompanied by a postcard.
