Chef Maxime Bouttier is set to open Éthanol in mid-February 2026, at the corner of rue de la Folie Méricourt and rue Jean-Pierre Timbaud. This new spot strikes a balance between a wine bar and neighborhood bistro, nestled inside a beautifully renovated former shoemaker’s shop.
