Three years after launching his exceptional gastronomic restaurant Géosmine, and two years since earning a first Michelin star, Chef Maxime Bouttier is expanding his culinary empire in the 11th arrondissement of Paris with a new venture: Éthanol.
Located at the corner of Rue de la Folie Méricourt and Rue Jean-Pierre Timbaud, just steps from Géosmine, this new spot now occupies one of the city's oldest shoemaker's shops. Still operating until recently, the space has been completely transformed by Architecture Atelier Leymarie. Inside, you'll find a warm blend of solid oak, terracotta tiles, Corten steel, and expansive glass walls that open onto the street during the warmer months.
Starting in February 2026, the venue will transform into a multifaceted space: a wine bar that evolves into a lively neighborhood bistro as the evening sets in — and also on Sunday afternoons. Open from Wednesday to Sunday, Ethanol will serve a market cuisine described as "poetic and raw", presented as tapas and shareable plates at fair prices.
The menu will evolve throughout the week and even during a single evening, featuring highlights like pata negra cheese boards, as well as fish and cheese platters at Chez Virginie to start things off with a bang. The culinary journey continues with a juicy rib-eye or a decadent saffron crème caramel on Sunday lunch. To complement these dishes, more than 400 different wines from various regions, countries, and winemaking techniques will be available.
