Set against the historic backdrop of the Hôtel Westminster, Chef Grégory Gbiorczyk is redefining French cuisine with a concise, ultra-fresh menu at the heart of Céladon. Open exclusively on Friday and Saturday evenings, this intimate restaurant offers a timeless experience where palace-level luxury becomes within reach.

Nestled between the prestigious Place Vendôme and the Opéra Garnier, Hôtel Westminster welcomes guests into its gastronomic restaurant, Le Céladon. At the helm is Grégory Gbiorczyk, a former chef at the Ritz and the Bristol, who crafts French cuisine inspired by market treasures, showcasing classic dishes of French cuisine with a contemporary twist.

Available only on Friday and Saturday evenings from 7 PM to 9 PM, this special menu is also offered during weekday lunchtimes at Le Petit Céladon, providing a more wallet-friendly option.

The restaurant, small and cozy, away from the hustle and bustle of busy brasseries, is tucked behind the stunning English-style bar of the hotel, the Duke's. Holding a 5-star rating, it stands as one of the most prestigious and historic addresses in the city, originally conceived in the 1800s in honor of the Duke of Westminster, where European aristocrats once gathered. While the elegant and refined atmosphere remains unchanged, it has become more accessible, making it an ideal spot for a delightful evening break.

After a brief wait in the spacious lobby—don't hesitate to ask for directions to find the restaurant—we're shown to our table by Marc, who will attend to us thoughtfully throughout the meal. We take a quick peek at the cocktail menu (22€) at the nearby bar, set in a cozy, intimate atmosphere.

We choose the Fleur d'Écume, a delightful concoction blending hibiscus-infused vodka with house-made pomegranate shrubb for a cocktail that's both mellow and floral, served in an elegant engraved glass. We also indulge in the Lemongrass Bloom, featuring a Gin & Tonic infused with vervain and lemongrass, fresh and subtly tangy.

Before the starters, some tempting aperitifs are served—alternating between foie gras with truffle or herbal cream with caviar—to start the meal on a luxurious note.

For each category, only four options are available on the menu, offering enough variety to satisfy all tastes while guaranteeing quality and freshness. This streamlined approach allows each dish to shine without spreading too thin. Onion and vegetable lovers should try the Roscoff Onion Ravioli (€16), a comforting dish with a sweet-salty flavor.

They are placed in a gentle, fragrant broth served in a small, kept-warm teapot, allowing us to add it at our own pace and preference.

If you prefer Foie gras (24€), it’s prepared here both hot and chilled, infused with elderflower. The texture is tender and melt-in-your-mouth on the inside, with a subtle sweetness from the floral aroma. Topped with crispy, salted buckwheat chips, this dish is elevated by a variety of textures, resting in a rich, creamy sauce dotted with tiny grains of buckwheat. A dish to savor in multiple stages, offering both elegance and rustic charm.

For the main course, we opt for fish, featuring a delicate limanda sole (€37) with melt-in-the-mouth flesh. Its presentation resembles a dessert, as it's chilled with champagne butter, adding a richer, creamier, and slightly citrusy touch. It’s served alongside barbecued pak-choi, which introduces a subtle smoky flavor.

The restaurant tailored its offering to accommodate a seafood allergy by presenting a dish not listed on the menu—a sea bass fillet. At first glance, it seemed straightforward, but it was gently cooked at low temperature in salted butter, and served with a rich, dairy-free cream made from watercress — a true standout that delighted the senses.

The finale of this dinner is a true showcase of technical finesse: the Chocolate Leaf Sauté from Santo Domingo (€14). Exceptionally refined, it features a delicate, airy structure where crisp cacao tiles rise above a rich crème anglaise. The chocolate displays bold flavors without veering into bitterness, while the accompanying emulsion echoes the smooth richness of a freshly roasted coffee.
