Maxime Frédéric has imagined this exceptional galette des Rois in a regressive, comforting spirit. And we're all for comfort, of course. So, we're not going to lie, we're basically classic frangipane for ever. That said, once you've tasted this galette des rois, you might change your mind.
The puff pastry, made with pure Normandy butter and caramelized with cane sugar, evokes the meticulous techniques of cannage weaving. Each strip is shaped by hand and delicately embellished with a chocolate border.
The frangipane, flavored with vanilla and Madagascar milk chocolate, is magnified by an Indonesian dark chocolate ganache, all wrapped in a delicate puff pastry.
First of all, we love the caramelized puff pastry for added crunch. The heart of the galette is a gourmet frangipagne where milk chocolate, with its hint of vanilla, seduces young and old alike.
