For Romain Fabry, founder of La Compagnie du Café, "the right roast is just a few seconds and a few degrees away".
Therefore, in the Compagnie du Café roasting shop located in Notre Dame de Lorette street, the roaster offers a selection of vintage coffees roasted according to his experience in a latest generation machine that promises an irreproachable quality and stability of flavors.
Romain Fabry selects his coffees from small producers: for example, Suddi Montains is a semi-forest Arabica Moka from the Anfilloo Wallagga region in Ethiopia, Yrgacheffe is an Arabica Moka from the Sidamo region (Ethiopia), while La Cumbre de La Finca El Manzano is a "natural" Arabica Bourbon Rouge from the producer Emilio Lopez in the volcanic Illamatepec region of El Salvador.
Brought in freshly harvested, the beans are roasted by Romain Fabry and put in bags to keep them fresh for two-three weeks. If you can then buy your coffee in bean or ground, the coffees offered are served on the spot, a good opportunity to choose your coffee according to its aroma and its strength.
The espresso costs 2,40€ and can be accompanied by cheesecake, carrot cake and banoffee (to die for!) for more pleasure.
