For this Christmas 2021, Pierre Marcolini releases 4 indulging yule logs. The first one, "L'Envol" has won the 1st prize for the World's Championship of 1995. It has it all: Cuban-Sao Tome grand crus dark chocolate mousse, orange crème brûlée, hazelnut crunch, we challenge you to resist it!
There is also the coffee yule log, "Bûche Café", a staple at the end of the meal: light coffee butter cream, very low in sugar, spread onto sponge cake and sprinled with almond nougatine. The bitterness of coffee perfectly balances with the flavors reminding one's childhood.
For children and grown-up children, the "Bûche Oviédo" will win everyone! Milk chocolate zabalione, Madagascan vanilla crème brûlée, caramelized hazelnut crunch covered in homemade milk chocolate glazing, a genuine treat for taste buds.
Last but not least, for the eponymous pastry fans, it is impossible to miss the "Bûche Forêt Noire"; crunchy almond and chocolate cake, enhanced with slightly chocolatey mousse encasing fruity Morello cherry heart and whipped cream flavored with vanilla. The whole coated in Cuban - Sao Tomé grand crus dark chocolate, you will eat it all.
Each of these yule logs serves 6 and costs €49 (€59 in delivery) and €6.5 for the indvidual-sized.
Pierre Marcolini's 2021 Christmas chocolates and treats
Pierre Marcolini does it again with his very beautiful Signature Christmas tree made of Cuban - Sao Tomé grand crus chocolate topping a box filled with starred gianduja and 36 truffles. Perfect to cause a sensation and offer a sweet treat to pair a hot drink. The tree is available in store for €129.
There is also the Christmas wreath to share, the Couronne Céleste. It could make you melt with delight with smooth old-fashioned gianduja, crunchy caramelized Sao-Tome cocoa nic, whole Faro almonds and chocolate-covered orange peels covered in Cuban - Sao Tomé grand crus dark chocolate. Allow €70 for this indulging creation.
Among the other creations, there are also two lovely slabs likely to make the youngest ones very happy. First, there is the "Sapin Bonheur" with a tree made of Piedmont hazelnut gianduja mixed to homemade milk chooclate, caramel chips and Maldon salt flake with a sky made of milk chocolate and a homemade white chocolate moon. Then, there is the "Ours Enneigé", a little bear made of Piedmont hazelnut gianduja on an ice floe made of homemade white chocolate and Madagascan vanilla. Two indulging delights respectively costing €25 and €11.90. And of course, do not forget about the Christmas macaron filled with Grand Cru Peruvian chocolate ganache and soft heart made of milk chocolate gianduja (€2.10 apiece).
