In the heart of Paris, La Manufacture Plaq stands out in the world of chocolate. Designed by Sandra Mielenhausen and Nicolas Rozier-Chabert, it embodies a shared passion for chocolate. After leaving careers in marketing and communications, they embarked on their chocolate adventure, inspired by Chloé Doutre-Roussel and Dandelion's book "Making Chocolate".

Plaq is no ordinary chocolate shop. Here, chocolate is celebrated in its purest form: cocoa beans and cane sugar. No additional cocoa butter, lecithin or vanilla. Small stone-grinding machines enable this process without the addition of cocoa butter. The products are handcrafted in small quantities, ensuring unrivalled quality and originality.

Plaq' s secret lies in the transparency and traceability of its cocoa beans. Each step, from bean selection to roasting, is carefully carried out to sublimate the cocoa's natural aromas. The chocolates, such as the fine plates with whole hazelnuts, are a celebration of indulgence.

But Plaq 's star attraction in winter is undoubtedly its hot chocolate. Prepared in advance from a recipe by pastry king Pierre Hermé, the hot chocolate is boiled and infused for at least one night to reveal all its flavors. At the moment of ordering, it is heated with a nozzle, giving it an incomparable smoothness and intensity. It's made from Maya Mountain cocoa beans from Belize in Central America, a balanced, fruity cocoa with a hint of acidity.

Lightly sweetened, this hot chocolate is a revelation, and can be enjoyed with water for extra strength, or with milk for a fuller body. Its distinctive taste may confuse some, but one thing's for sure: you won't find this hot chocolate anywhere else, as they're the only ones to work with this bean. For even more indulgence, try our homemade whipped cream, made with real full-fat cream for extra body.

Note that these sweets and the hot chocolate are available to eat in or take away. There's no tea room on the premises, but stools and cans have been set up in the alley to relax and fill up on magnesium.
