L’Atelier du Tartare is the story of a couple that wanted to share their taste for good products by offering them in their raw state: in carpaccio and tartare.
This September, a new chef is coming as well as a new menu full of creativeness and flavors.
Infeed famous chef Julien Valéro – who cut his teeth with Guy Savoy and Yannick Alleno at Stay, at Georges V and reached the apex at the Ritz – creates new ways of cooking meats and fishes.
Like the owners of the place, he highlights products such as salmon, tuna, beef from Olivier Metzger’s butcher’s shop from Nièvre.
This is how you can find a Vitello Tonato carpaccio with fine slices of veal, tuna sauce with capers, anchovies and parmesan (€20), the “L’Atelier” carpaccio with its sirloin steak from Metzger’s, its salad with truffle oil and parmesan (€25).
If you’d rather like a tartare, let yourself be tempted by the original Nordic Salmon with it knife-sliced salmon, sweet mustard sauce, pineapple and horseradish whipped cream (€21) or the more classic beef tartare with its foam seasoning.
A set menu is provided from Monday to Friday with a starter and a main meal or a main meal and a dessert for €17. For the most gourmet eaters, the starter, main meal and dessert set menu is at €23. The menu contains a carpaccio or tartare of the day with homemade fries, salad or coleslaw.
You can also get an à la carte meal like ceviche, club sandwich or Caesar salad.
