Named World’s Best Pastry Chef in 2018 by the World’s 50 Best, Cédric Grolet unveils his creation for Christmas 2019. This year, the talented chef offers us a fresh and green yule log focusing on his favorite fruit, lemon.
To do so, Le Meurice pastry chef mixes several light preparations: soft yellow lemon cake, fresh lemon zests, yellow lemon and black lime jelly runny heart, yellow lemon juice and segments. Lemon lovers, you’ll be happy!
But that’s not all, the preparations are mixed with whole fresh herbs, dots of basil, tarragon, mint and tagetes pesto elevate these sour flavors. The whole covers a crunch cereal mix slightly roasted (red, black & white quinoa, sesame, sunflower, squash, kasha, white and brown flax seeds). A healthy yule log if we may!
The whole is coated with whipped lemon/yuzu ganache. And last but definitely not least, fromage black mousse, sour lemon segments finish the yule log.
A healthy and fresh version, far from the common idea that Christmas yule logs are heavy. How good it feels! This creation can be discovered at Le Dalí restaurant from December 16 to 26, 2019 in the afternoons from 3:30 p.m. to 6 p.m., for lunch or dinner.
