Galettes and brioche des rois 2021 from Sébastien Serveau's Pâtisserie Fine

In his new Pâtisserie Fine pastry shop in Versailles, chef Sébastien Serveau unveils two galettes and a brioche des rois 2021 for Epiphany 2021.

Pastry chef Sébastien Serveau has justopened Pâtisserie Finein Versailles. In addition to a fine selection of Yule logs for Christmas 2020, this discreet figure in French patisserie, who has worked with some of the great Houses, is also unveiling, forEpiphany 2021, two galettes des rois, as well as a brioche des rois, for lovers of different flavors.

If you're more the classic type, you're sure to fall for the melt-in-your-mouth almond galette. If you prefer a change from the usual, then opt for the apple-hazelnut fondant galette!

  • LA GALETTE FONDANTE AMANDE: Reverse puff pastry with Charentes Poitou A.O.P. butter, almond frangipane cream. Price: 36€ for 6 people
  • LA GALETTE FONDANTE POMME NOISETTE: Inverted puff pastry with Charentes Poitou A.O.P. butter, Piedmont hazelnut I.G.P. frangipane cream, poached apples in syrup flavored with Bourbon vanilla pods, caramelized hazelnut flakes. Price: €39 for 6 people

  • LA BRIOCHE DES ROIS: Orange blossom and orange zest brioche dough, Candied fruit, Crumble, Granulated sugar. Price: 28€ for 6 people
