This Thursday, October 9, 2025 at 9.10pm on M6, the amateur pastry chefs of Meilleur Pâtissier will be back for a show dedicated to pies. On the program: revisiting the lemon meringue pie, discovering the Berry poirat and creating a giant pie in the shape of an animal.

After sublimating chocolate last week, the Meilleur Pâtissier contestants tackle pies this evening in the fifth week of competition on the show broadcast on M6. This gourmet evening, which can be followed from 9.10pm, promises to be a treat, with three challenges featuring this must-have dessert of French pastry-making, under the expert eye of Cyril Lignac and Mercotte.

What technical challenges await the Meilleur Pâtissier contestants?

To kick off this evening dedicated to tarts, Cyril Lignac chose to challenge the candidates with one of his favorite desserts: lemon meringue pie. This emblematic recipe of French pastry-making requires a perfect mastery of the balance between the sweetness and acidity of the lemon, not forgetting the airy lightness of the meringue that must crown the whole. Amateur pastry chefs will have to revisit this great classic while respecting the fundamentals that have made this timeless tart such a success. A delicate exercise that will allow us to discover their creativity while observing their technique.

What is Poirat du Berry and what is its traditional recipe?

The next challenge takes us to the heart of the French terroir with Mercotte, who pulls out of her precious grimoire a little-known but oh-so-tasty recipe: poirat du Berry. This traditional tart from central France features pears in a rustic and generous preparation. Poirat du Berry is a traditional pie from the Berry region that combines pears and pepper in a flaky or shortcrust pastry. What makes this recipe unique is the addition of pepper, which subtly enhances the taste of the fruit. George Sand, the famous writer, was particularly fond of it, and even mentions it in her novel "Le Meunier d'Angibault".

To prepare, the pears are peeled, cut into pieces and macerated for 30 minutes to 1 hour with the brandy, sugar and cracked pepper. The pastry is divided into two portions: one lines the bottom of a mould, the drained pears are placed in it, and the whole is covered with the second portion of pastry with a small hole cut in the center to let the steam escape. The pie is gilded with beaten egg, then baked at 200°C for around 15 minutes, before being lowered to 170-180°C for a further 20 to 25 minutes. This Berrich speciality is best eaten warm, perhaps with a dollop of crème fraîche. We particularly appreciate this type of competition, which allows us to rediscover regional recipes and promote French gastronomic heritage, often forgotten in favor of the great Parisian classics.

What's this week's creative challenge?

The evening concludes with a creative challenge called "La tarte est dans le pré", which invites candidates to draw inspiration from nature to imagine a giant pie in the shape of an animal. This gourmet walk in the wilderness challenges pastry chefs to demonstrate their boundless imagination, while mastering the complex techniques required to create a piece of this scale. We'll be watching closely to see how they manage to combine aesthetics and delicacy in their XXL creations.
