Mabel is an unusual address, an incredible place run by a Franco-American couple. At first glance, you might think that Mabel is a small establishment run by Samantha, an American who prepares grilled cheese for local employees, but that's without taking into account Joseph Akhavan, her partner and a finalist in the 2013 Bar Trophies!

Open since November 19, 2014, Mabel is a speakeasy, THE bar for rum insiders. In a space hidden from view, Joseph Akhavan practices a whole art, that of mixology; and he has a secret! He knows by heart the characteristics of 108 different rums, and can advise you on your choices just as an oenologist would advise you on which wines to choose according to your tastes and mood.

In his workshop, he introduces us to the art of rum with "routes du rhum": 8 tasting platters in 3 x 25 ml glasses, from €16 to €24, offering a panorama of rums from one region of the world. For Joseph Akhavan, it's an opportunity to educate Parisians about rum. You realize that three rums from the same region can have different flavors, and be totally different.

In his cocktails, Joseph Akhavan mixes two or three different rums, because he knows that each rum can bring particular notes to the cocktails. There are 15 cocktails on the menu, priced at around €13.

To accompany these rums or cocktails, Samantha offers us a grilled cheese (the equivalent of our croque-monsieur), an American specialty that makes her heart sing because it reminds her of her childhood! For 6€, you can try the classic, a hot sandwich made with cheddar cheese and grilled on a plate with a press. And for 8€, you can enjoy a grilled cheese with Pulled Pork, a pulled pork sandwich with homemade zucchini relish and cheddar cheese, or a grilled cheese with turkey, the famous "Turkey Time", topped with granny apples, spinach shoots and not forgetting the cheddar.
