This is a great first for Christophe Michalak! The famous pastry chef opens his very first bakery in Paris! The latter, called Kopain, is set in Paris 10th arrondissement, in the very lively rue du Faubourg Poissonnière, right by his café-masterclass.
You may not know it yet, but this is not so surprising for Michalak to open a bakery. Actually, the pastry chef trained at 15 in a bakery and not in a patisserie! Although then, he became a pastry chef, he has always wanted to go further into working bread and viennoiseries.
After satisfying his bakery need at Plaza Athénée where he worked on a new range of viennoiseries and breads – specifically Gugelhupf, sugar pies, and stuffed buns – the chef is facing up a new adventure, the opening of Kopain!
According to the main interested party, Kopain aims at being a local bakery with no fuss where dough (for bread, bun, pie, viennoiseries, baked goods!) is given pride of place. Let us fall for the bottereaux from Vendée, the pretzel croissants, the sour apple pie, and the gluten-free creations such as this chestnut custard pie.
Organic flours, PDO butter, natural yeast, organic eggs, long time fermentations, oil, PDO olives from Vallée des Baux de Provence,… here are – among others – a few staples waiting for you at Kopain.
