There's no doubt about it. International cuisine is now everywhere in Paris. While Japanese and Italian cuisine have (almost) no secrets left to reveal, some specialties remain little known. This is particularly true of pelmeni. Originally from Russia, and more specifically Siberia, pelmeni are delicious stuffed dumplings, usually filled with meat and vegetables, and served with broth, smetana (sour cream) and fresh herbs such asdill.
Considered one of Russia's oldest traditional dishes, pelmeni are the stars of Raphael Eskidjian's fast food concept. Opened in February 2021 in the 17th arrondissement of the capital, Pelmeni Paris showcases this specialty through several tasty recipes.




On the menu at Pelmeni Paris? Tortellini-shaped ravioli stuffed with meat (Basque Kintoa pork, Auvergne Label Rouge chicken, organic Limousin beef, organic lamb). For vegetarians, try the varenikis, shaped like half-moons. These are ravioli stuffed with vegetables, particularly mushrooms or Russian cheese, tvarog. Everything is served with smetana and dill.
To tantalize your taste buds with his pelmeni, Raphael focuses above all on quality, using semi-whole organic wheat flour from the Moulin de Versailles, organic eggs, and Label Rouge, A.O.P., and organic meats. And of course, everything is homemade. As you can imagine, it takes time to make and fold these little Russian ravioli by hand. So, to speed things up, the young entrepreneur has invested in a pelmeni-making machine from the city of Omsk in Russia. This machine can produce 400kg per hour, compared to 6kg in three days by hand.




Of course, Pelmeni Paris also offers a selection of starters to enjoy on site, take away or have delivered, including the unmissable pirozhki, as well as desserts such as the delicious medovik, a cake made up of several layers of sponge cake with honey, almonds, nuts and cream.




Finally, Pelmeni Paris also has a grocery section with a fine selection of Russian vodkas, Slavic liqueurs, and Armenian (Raphael's homeland) and Georgian wines.
In terms of decor, Pelmeni takes us on a journey with its Tsarist-era décor and baroque and rococo atmosphere. With a 16-branch chandelier and reproductions of portraits of the Romanov dynasty, we are transported back in time to the era of the Tsars and Tsarinas of Peter the Great's Russian Empire.
