After having regaled the 9th arrondissement and the Pigalle district, and then taken up summer quarters on the terrace of the Museum of Modern Art in Paris, Dumbo has landed with its smash burgers, hot off the grill, in the 10th arrondissement of the capital, rue des Petites Ecuries!
For this second place, Charles Ganem and Samuel Nataf, the founders of Dumbo, keep the same recipe that made the success of the first Dumbo: smash burgers prepared at the minute that are among the best smash burgers in Paris, let's face it!
But in addition to the smash burgers, the two partners have also added the fried chicken (6€), which was offered at the first Dumbo during the first weeks of opening. Dumbo's recipe is inspired by the classic southern fried chicken, with pieces of French free-range chicken thighs marinated for several hours in a buttermilk. They are then coated in a secret blend of different flours and spices, before being fried and devoured with a homemade ranch sauce with fresh herbs and a chipotle-based hot sauce!
The other big surprise available only at this new address, and which should delight those who were 10 years old in the 2000s, is the arrival on the menu of the famous apple pie (3€), the much missed icon of fast food desserts. This fried apple cinnamon turnover is made with good products such as a puff pastry with PDO butter and slowly stewed apples.
Like Pigalle's Dumbo, this one is also dedicated to take-out only. It must be said that the place is, like its big brother, tiny and minimalist.
