To intensify these flavors, a chocolate crunch with kasha, salt flake and fluffy buckwheat flour cake and cocoa brings some crunch.

Add to this a 65% Peruvian dark chocolate mousse to bind all the flavors, with a bit of Espelette pepper in the chocolate ganache adorning the masterpiece with shiny and bright reflections.
