For his first Epigany at the Burgundy Paris, young pastry chef Pierre-Jean Quinonero wished to pay tribute to the Notre-Dame cathedral with a delicate cake. A wonderful creation for the young chef named 2021's France's Dessert Champion.

He certainly is a rising star of the pastry in Paris: 29-year-old Pierre-Jean Quinonero got himself talked about when becoming 2021's France's Dessert Champion, after being named Best Apprentice in France back in 2014. His first yule log for the Burgundy was a delight as much as a visual masterpiece (wonderful candles made by hand), and for his first Epiphany at the Burgundy Hotel, he provides us with an elegant-looking cake but highly intricate.

His 2022 Epiphany Cake is based on almond frangipane cream twisted with almond praline, and a bit of Tahitian vanilla. A wonderful pastry that will not leave you cold. Despite the scrumptiousness of the cake, it is moreish, surely because of the vanilla and the PDO butter Vienna bread that is used for the puff pastry.

Are you drooling? The cake is available in Click & Collect until January 10 in Fou de Pâtisserie stores at 45 rue Montorgueil, 75002 Paris, at 36 rue des Martyrs, 75009 Paris or at 64 rue de Seine, 75006 Paris, or to collect from January 2 to 15, 2022 at the Burgundy Paris!
