He certainly is a rising star of the pastry in Paris: 29-year-old Pierre-Jean Quinonero got himself talked about when becoming 2021's France's Dessert Champion, after being named Best Apprentice in France back in 2014. His first yule log for the Burgundy was a delight as much as a visual masterpiece (wonderful candles made by hand), and for his first Epiphany at the Burgundy Hotel, he provides us with an elegant-looking cake but highly intricate.
His 2022 Epiphany Cake is based on almond frangipane cream twisted with almond praline, and a bit of Tahitian vanilla. A wonderful pastry that will not leave you cold. Despite the scrumptiousness of the cake, it is moreish, surely because of the vanilla and the PDO butter Vienna bread that is used for the puff pastry.
