La bistronomie désigne une cuisine française qui twiste les classiques du bistrot avec modernité. En d'autres termes, des assiettes ciselées, contemporaines, dans un cadre décontracté. Ex : des oeufs mayo classiques, ce n'est pas de la bistronomie, c'est de la cuisine bistrotière, française voire parisienne. En revanche, des oeufs surmontés d'une mayonnaise aux herbes fraiches avec une émulsion d'agrumes et une chips de parmesan, c'est de la bistronomie.
