Stéphane Manigold unveils his latest project: Hémicycle, a gourmet restaurant due to open in September.

And 8 for Stéphane Manigold. After the starred Granite and Substance, Braise, Contraste, Liquide, the Bistrot Flaubert and the double-starred Maison Rostang - acquired from the Rostang family - the Parisian restaurateur is preparing to launch a new restaurant with his group of the same name this autumn.

August 29 will see the opening of Hémicycle, a new restaurant located at 5 rue de Bourgogne, in the chic 7th arrondissement. If you're familiar with the address, your gourmet memory is excellent. It's in the nest of the former Loiseau Rive Gauche that you'll find this new restaurant by Manigold.

Starting from scratch after two years of renovation, the restaurateur unveils a three-storey space, culminating in the 32-cover restaurant on the first floor. In the large open kitchen, a duo familiar with Stéphane Manigold's projects: Flavio Lucarini, who worked as a chef at Gabriel, Passerini and Bistrot Flaubert, and Aurora Storari, who worked at Mirazur and Clarence; together in the city and behind the stove.

The tandem has created a gastronomic menu with an Italian flavour, one in charge of the savoury side, the other of the sweet. Langoustines cooked in fig leaves, beluga lentil salad; watercress risotto, squid and black lemon; roasted calf sweetbread, olive-algae condiment, faisselle, yellow tomato concentration, not forgetting some fine sharing pieces and a baba au vin jaune to finish on a high note - a dessert that Aurora Storari already presented at the Clarence... so many marvels that may well turn the whole of Paris upside down.

On the second floor,Hémicycle also unveils a pastry bar and a private lounge for intimate dinners, as well as a speakeasy cocktail bar on the second floor for restaurant guests and club members.
