Behind this address stands a close-knit duo of true enthusiasts: David Baroche and his wife Delphine. An outstanding charcutier who cut his teeth at the finest maisons, the chef has a solid résumé, with prestigious competitions (up to the world pâté en croûte) and kitchen stints, notably at Matignon and then at his market-side restaurant on Saint-Honoré, before opening the Brasserie Baroche in 2011, on the Champs-Élysées side.
Here, it returns to the very essence of his trade, that of the beauty and quality of the produce. And the many gourmets who push through the door aren't mistaken, drawn to the place by this simple promise: eat well, choose well, and walk out with arms full.
Far from the rigid codes of traditional charcuterie, Maison Baroche is first savored with the eyes. In a bright atmosphere, you’ll discover the well-stocked shelves, the fridges well stocked, the colorful jars, the terrines with evocative flavors, and the multitude of carefully sourced products.
A true playground for food lovers, the House is the perfect place to assemble, in self-serve, a no-fail gourmet basket at any time of the day... or to dine on-site! Because at the heart of the space, up to 12 diners can gather around the grand host table, decked with tulips.
The house charcuterie sets the tone: terrine of friends with prunes and roasted hazelnuts, grandmother’s terrine with chicken livers, rillettes, pâtés... Everything is prepared with precision and generosity. The pâté en croûte, a true signature of David Baroche, reaches a remarkable level, sometimes enriched with an insert of foie gras, to be paired with house pickles such as Menton-brined lemons or mustard seeds to wake up the whole.
But Maison Baroche’s flagship creation is undoubtedly the saucisse that deserves special attention. Spinach and wild garlic, smoked bacon and coriander, Perche-region pork with cumin and honey, and even truffle—each recipe imagined by the chef asserts a distinct personality. Quick-seared on the plancha, served juicy with a purée maison, they embody the full savoir-faire du charcutier.
On the culinary side, for lunch you can sample a plat du jour (on our visit, a tempting blanquette of chicken with tarragon), a soupe du jour made from market vegetables, and a variety of dishes to take away or enjoy on site. The whole offering is, of course, crafted in an artisanal spirit, with a large laboratory on site where everything is prepared.
Pies, bistro-style dishes, salads, croque-monsieur and soups (pasteurized or not) complete this simple yet refined offering that does justice to French cooking even in the desserts (rice pudding, lemon curd, chocolate mousse) slyly tucked away in resealable containers, and the sweet snacks - cakes homemade, divine cocoa-tonka bean shortbreads.
Before you go, you might resist—or give in to—the urge to build the dream gift basket, picking up top-notch items here and there: charcuterie and smoked salmon sliced and vacuum-sealed on site, spreads, ham and pork specialties, dry sausages and the less dry ones, jams, honeys, chocolates, not to mention a thoughtfully curated selection of wines and beers.
