After five years of Créatures, the chef shifts perspective but stays true to his signature. On the terrasse, the cuisine is sunny, generous, and convivial. Here, the bistrot français takes to the outdoors with dishes that reinterpret the great classics. Egg mimosa with black garlic, leeks in elderflower vinaigrette, onglet with pepper sauce, gravelax twisted with blueberry, Greek yogurt and tarragon, truffle-parmesan coquillettes, or chocolate-pistachio profiteroles: comforting plates that come with a view with a view.
Staying true to his veggie-forward ethos, Julien Sebbag also brings the season onto the plate. Asparagus, peas, heirloom tomatoes, or family ratatouille parade across a summer menu designed for long sun-drenched gatherings, between friends, colleagues, or serial shoppers looking for a pause above the Haussmannian bustle. Special nod to the semainier, which revives the great rituals of neighborhood bistros with aioli on Tuesdays and beef bourguignon on Thursdays.
The experience stretches from morning to late night. By 10 a.m., you scale up for a slice of traditional baguette with butter and jam, Paris at your feet. At noon, regulars on the Grands Boulevards find a fresh, sunlit pit stop. In the golden hour, cocktails inspired by the season, French wines, and small plates to share arrive at the table, before the rooftop shifts to a softly lit mode until 1 a.m.
On the decor side, Balcon takes cues from the Parisian bistro, reimagined with a Brutalist edge: raw materials, burgundy and bottle-green woven chairs, a "Parigot" zinc-bar vibe, and a soundtrack that evolves as the day goes on. All of it rests on a 140-seat terrace perched above the capital’s rooftops.
