Adrien Salavert's Hotte Yule log for Belles Perdrix de Troplong Mondot

Ah, Christmas- an enchanted time of year we've been looking forward to with great anticipation! As the streets light up, shop windows come alive and markets bloom. As for the pastry-makers, they're all pulling out all the stops to offer families an even more gourmet Christmas in 2022!

Such is the case withAdrien Salavert, former pastry chef at La Réserve in Paris, who now works at Belles Perdrix, the restaurant of Château Troplong Mondot in Saint Émilion. Gourmets in the capital have already had the pleasure of tasting his innovative and refined creations: they'll be delighted to learn thatAdrien Salavert 's festive creation can, like last year, invite itself onto their festive tables despite the distance. That's right: for his second Christmas log at Les Belles Perdrix, the young pastry chef reveals a gourmet masterpiece that can be shipped to Bordeaux and Paris on December 23, or picked up in Saint-Emilion!

This year,Adrien Salavert offers us a new, highly elaborate trompe l'oeil. This time it's a harvest version of Santa's Hood, as Saint-Emilion is obliged to do. This hood takes the shape of a Château Troplong Mondot grape harvest crate, in which the famous bundle filled with Santa Claus presents is placed. When tasted, it reveals a creamy Grand Cru du Brésil milk chocolate, vanilla mousse, clementine and verjuice confit, and a crunchy caramel cookie.

Santa's white chocolate bag gently slides off the top to reveal the gifts. A chocolate tag, which can be personalized with your children's or grandchildren's names, is attached to the bag.

If, at first glance, the visual appearance gives the impression of a hard, perhaps heavy chocolate shell at the end of a meal, this is not the case at all. The dessert is in fact light on the palate, and the vanilla mousse and clementine confit bring sweetness and freshness to this entremets that will finish your festive meal in style.
