This year, Pierre Hermé takes us on a rather unexpected underwater journey for the holidays. The Parisian pastry chef fell in love with the work of Courtney Mattison, an American ceramicist who sculpts huge coral reefs out of porcelain. This encounter gave rise to the Abysses collection, where each Yule log and each chocolate evokes the curves and contours of the oceans. It's a far cry from traditional Christmas trees and reindeer, and frankly, it changes everything.
The dialogue between the two artists has given rise to creations that oscillate between sculpture and pastry. The packaging plays on shades of blue and marine reliefs, while the pastries themselves seem to have come straight from the depths. An aesthetic approach that reminds us that the beauty of the oceans is as fragile as it is precious.
Let's start with the absolute must-have: the Nérée log, an exceptional piece priced at €430 for 12 people. It comes in a chocolate shell that replicates the rugged contours of reefs, filled with Infiniment Noisette praline. Beneath this spectacular shell lies a dome of Pure Origine Bélize dark chocolate, which takes a bold approach with nori seaweed and yuzu. The marine and smoky notes of the seaweed meet the freshness of the Japanese citrus fruit—it's daring, and it works. Available only by order on December 23 and 24, 2025.
For the Infiniment Chocolat boutique, Pierre Hermé has taken the extravagance even further with a chocolate sculpture weighing nearly 12kg that reproduces an entire reef. The artisan chocolatiers spend hours assembling and painting this monumental work by hand. The price? On request, of course.
Our real favorite isthe Anthéa, priced at €130 for 12 people. This signature log combines the delicious taste of pistachio with Pure Origine Bélize dark chocolate. The chocolate comes through first, bold and powerful, before giving way to the pistachio, which expresses itself in an Infiniment Pistache praline. A touch of fleur de sel enhances the whole and it is simply delicious. It can be ordered from December 11 to 31, 2025.
For those looking for more accessible formats, individual and sharing-size Yule logs will be available on pierreherme.com and in stores from November 27 in individual sizes, then from December 11 to 31 for sharing sizes. La Fhlor plays on the sweetness of vanilla with notes of hazelnut and subtle hints of Flohr specialty coffee from Honduras. La Séréna celebrates mandarin enhanced with gingerbread, perfect for the holidays. And if you like surprising combinations, try Loomi, which combines dark chocolate from Belize and black lemon with empyreumatic flavors, something you don't see everywhere.
The Ispahan makes its eagerly awaited return in log form, with a light cream with rose petals, lychees, and raspberries providing the necessary acidity. My version of Mont-Blanc revisits the Alsatian classic by combining chestnut with wild rose for a touch of freshness. Prices are €10 for an individual serving, €48 for four people, and €82 for eight people.
Don't miss the Vénus, a Galeries Lafayette Le Gourmet exclusive at €72 for eight people. Pierre Hermé revisits his memories of Alsace with quince and rose, softened by apple and mascarpone cream. The Breton shortbread breaks up the softness of the soufflé biscuit, and we must admit that it's a wonderful discovery.
If you're looking for an Advent calendar that stands out from the crowd, Pierre Hermé has three versions up his sleeve. The Signature Calendar at €65 (180g) offers 24 Infiniment Chocolat creations in a brightly colored wreath. Available for pre-order from October 16, 2025, and in stores from October 23.
The Infiniment Gourmand Calendar at €95 (500g) adds a box of delicacies that can be enjoyed starting in November, ideal for those who can't wait. But the real gem is the Calendrier d'Exception at €185 (950g). It contains a Christmas bauble handcrafted by Courtney Mattison in glazed porcelain, with reliefs that reproduce coral reefs and a touch of gold. Each piece is unique, numbered, and limited edition. A gift that will remain long after the chocolates have been devoured.
This year, Adorables macarons feature surprising combinations. Mandarin meets gingerbread in the Séréna, mango is paired with Corsican maquis honey in the Auréa, and grapefruit is complemented by celery in the Kizuna. There is also white truffle with Piedmont hazelnuts and Loomi with dark chocolate and black lemon. At €2.90 each, available from October 23, 2025, you can treat yourself without breaking the bank.
Panettones are making their grand entrance at Pierre Hermé with four varieties at €35: Ispahan, Infiniment Chocolat, Arya (pistachio and orange blossom), and Infiniment Noisette. These Italian brioches take more than 65 hours to make using natural yeast, according to Milanese tradition. Dark chocolate and honey gingerbread (€28) and stollen (€30) complete the picture for lovers of festive treats.
As for chocolates, the boxes feature blue tones reminiscent of sea foam, ranging in price from €14 (50g) to €84 (545g). We love the Récif creation at €29, praline pebbles that look like they've been shaped by the ocean. Three versions are available: hazelnut praline and dark chocolate, almond praline and milk chocolate, pecan praline and blond chocolate.
Pierre Hermé doesn't stop at gourmet treats. Pierre Hermé Paris has partnered with The Coral Planters, a French association founded in 2017 that restores coral reefs and creates new marine protected areas. A portion of the sales from the Récif creation is donated to the association. Better yet, 100 Récif creations come with a coral adoption certificate.
