What if, this Christmas, you gave someone a chance to step behind the counter? Julien and Franco are opening the doors to their mozzarella-making workshop in the 11th arrondissement of Paris. For two hours, in their artisan cheese shop, you’ll stretch the curds and leave with a mozzarella and a braided cheese you made yourself. A delicious experience for lovers of Italian cuisine, bookable on Wecandoo.
The workshop takes place just a few meters from Voltaire metro station. Julien, Franco and their team welcome groups of 4 to 10 around the workbench. They tell you about their craft, the buffalo milk that comes from Auvergne and what makes a good mozzarella. Then they let you take over. You don’t just watch a cheesemaker at work—you stretch the curd yourself, from curds to braided cheese, in a real neighborhood cheese shop. You leave with 300g of cheese you made with your own hands.
It all starts with curdling. Next comes the moment everyone’s been waiting for: the stretching. The curd moves from one bath to another, stretching and being worked at just the right temperature. With Julien and Franco’s guidance, you can feel its texture change beneath your fingers. All that’s left is to shape it: first into a perfect ball, then into a braid.
Buffalo milk gives mozzarella its soft, melting texture. Julien and Franco explain every step: the right temperature, how to turn the curd without breaking it. Everyone shapes their own pieces at their own pace and can ask any questions they have about cheesemaking.
The workshop ends with a drink and a few Italian specialties. You leave with 150 g of mozzarella and 150 g of braided cheese, to enjoy that same evening.
For an Italian food lover, a foodie friend or a curious family member, a mozzarella-making workshop makes a delicious Christmas gift to enjoy twice: during the workshop and then at the table. You can give it as a gift from its page or choose a Wecandoo gift card. The recipient can choose a date from the slots available year-round, on weekday evenings or Saturdays.
