At their chocolate shop on the Grands Boulevards in Paris, you’ll make your own chocolate bars together, from tempering to molding, guided by an artisan who talks about cocoa with passion. Sébastien and his team welcome you to their workshop, accessible via the Grands Boulevards, Bonne Nouvelle, Sentier and Bourse metro stations. He starts with the story of cocoa: where it comes from, how it is grown and how the bean becomes chocolate. You'll never look at your everyday chocolate bars the same way again.
Here, every ingredient is carefully selected. Throughout the workshop, they also share their vision of chocolate, from production to consumption, and offer tips for making better choices every day.
Apron on, you move on to the chocolatier’s technique: marble tempering, the process that gives chocolate its shine. The chocolate is spread out, cooled and worked until it reaches the perfect sheen. Together, you pour your chocolate bars and decorate them to your liking, with tips from the artisans.
The team also answers all your questions about chocolate and their craft. When it comes to decorating, you customize your chocolate bars to your liking, then compare your creations at the end of the workshop.
The workshop ends with a chocolate tasting. You’ll take home four 100 g bars, made together. If they survive the trip back.
