Originally from South Korea, Naraé Kim has forged an unbreakable bond between the finesse of her origins and the exuberance of French pastry. A two-time winner of world-renowned competitions, she now displays her talent in this Parisian palace, where she brilliantly combines creativity and tradition. Her signature style is the finesse of her creations, both in terms of aesthetics and taste, with recipes that are not too sweet, delicate and light, yet still indulgent.
For Christmas 2025, she unveils a "Broche de Gui" log that captures the magical spirit of the holiday season while paying homage to the neighborhood, which is popular with jewelers. This creation takes the form of a jewel representing a snow-covered, almost crystallized branch of mistletoe. Inside, it is full of zest and sweetness: it consists of a compote of kiwi, green apple, and young fir shoots for a tangy, slightly herbaceous mix, a fir tree biscuit, a vanilla ganache for a touch of creaminess, and a light génépi mousse, all on a crispy pine nut base. A beautiful way to reinterpret the holiday season.
This year, the Park Hyatt Paris Vendôme is offering a light and fruity log. It's a great choice to round off a hearty meal and is sure to delight guests who don't have a sweet tooth, as well as those with a taste for delicate pastries.
