Pancakes recipe from Pascal Hainigue, pastry chef at Burgundy Paris

To embellish the breakfasts, during the confinement, we enjoy pancakes, made from the recipe of Pascal Hainigue.

To start the day, we follow the recipe of Pascal Hainigue's pancakes, pastry chef of the Burgundy Paris, which we customize endlessly with fruits, maple syrup and even chocolate for the greediest.

Nothing could be simpler but nothing more delicious!

Pascal Hainigue's pancakes recipe

For 4 people

Ingredients :
250g of flour
40g of brown sugar
1 packet of baking powder
2 whole eggs
90g of semi-salted butter
10 cl of milk
25 cl of liquid cream
1 vanilla pod or vanilla extract
10g rum (optional), the Chef's tip!

Preparation:

In a saucepan, melt the butter and the vanilla bean (cut in half) and add the rum according to taste

Mix flour, baking powder and brown sugar

Gradually add the melted butter (having first removed the vanilla bean) to the mixture with the flour so as not to create lumps

Gradually add the milk and cream to the mixture and whisk

For the cooking, go back and forth in a hot buttered pan, the edges must be well colored

Chef's tip: prepare the dough the day before so that it has time to rest. They can be eaten warm with fruit, jam, lemon zest or chocolate for the greediest!
