For Chandeleur 2023, pastry chef Claire Heitzler has prepared a mouth-watering pastry. From February 2 to 5, gourmets will be able to discover a tangerine soufflé crepe cake to take away from her Levallois-Perret laboratory. A welcome change from traditional sugar crepes!
This dessert is made with vanilla crepes, lightened with egg whites. They are then baked in the oven like a soufflé, to become light and fluffy. Tangerine marmalade is added between each pancake to bring freshness to the whole.
The mandarins are picked in the South of France by Bachès-Schaller Citrus when fully ripe. For chocolate lovers, Claire Heitzler also offers a variation of this crêpe cake with hazelnut spread!
Count €25 for a crêpe cake for 3 to 4 people. An original Chandeleur 2023 is on the horizon, you gourmands!
