Résidence Dame Jane welcomes young gastronomic talent

The Dame Jane restaurant now welcomes young gastronomic talents into its kitchens for one or more weeks of residency. This is an opportunity for these young chefs to showcase their cuisine and try their hand at running a restaurant for the first time.

Since the beginning of October, the Dame Jane restaurant, perched on the heights of Belleville for the past 7 years, has become Résidence Dame Jane, a place of residence for young gastronomic talents .

Head chef Julie Caute has been at the helm of the establishment from the outset, and has decided to entrust the keys and the stoves to kitchen/dining room duos, as well as to a succession of new faces who will take upresidency for one or more weeks at a time, in order to showcase their cuisine.

The program, created with the support of theLa Relève agency, gives carte blanche to up-and-coming gastronomic talents, eager to try their hand at running an address for the first time, to explore their culinary creativity and express their desires.

Carlos Moreno, a young self-taught chef from south-east Mexico, was the first guest from October 6 to 16, and now it's Jules Lavergne 's turn behind the stove. A blend of bistro and Escoffier, Jules Lavergne's dishes include veal Marengo, croquettes of pig's trotters, quenelle of Loire pike, and pigeon roasted on the chest with a hearty jus. Dishes to discover from October 18 to 24, Mondays and Sundays from 7:30pm to 11pm, and Tuesdays to Saturdays from 12pm to 2:30pm and 7:30pm to 11pm.
