Shabu Sha, short for shabu-shabu, is one of Asia's best-known dishes: Japanese fondue. The name comes from the onomatopoeia of the sound of meat moving back and forth in a fragrant, simmering broth.
This restaurant, which opened at the beginning of January, is a real invitation to travel. The original, surprising decor is by Studio JANREJI, known for its interior design creations, such as at Hôtel Jules & Jim. The blue walls are covered with propaganda posters from the 1930s, found in Shanghai, and are lit by opaline and green brass sconces.
Settle arounda large central wooden table and discover a light, healthy fondue, a welcome change from our traditional Savoyard and Burgundian fare. Each guest is provided with a bowl of broth that simmers at the chosen temperature, and then chooses what to put in it on the magnetic conveyor belt, which scrolls through thinly sliced meat, fish, vegetables or noodles... No fewer than 40 ingredients are available for dipping and simmering in the broth.
With a choice of 5 sauces, you can dress up your shabu-shabu just the way you like it! For those who aren't fondue fans, there are also makis and california rolls.
