Claire Damon (from Des Gâteaux et du Pain) becomes Best in-store pastry chef 2018

Only woman winning the Prix d’Excellence Relais Desserts, Claire Damon has been named Best in-store pastry chef 2018. A Prestigious price rewarding her for her two Des Gâteaux et du Pain stores set in Boulevard Pasteur and Rue du Bac, where we can enjoy delicious bread and sweet creations each one more tantalizing than the other.

Prix d’Excellence Relais Desserts are a bit like the Oscars of the pastry. Every year since 2013, they reward, not the best actors and directors, but the high pastry, during a great evening and a gala dinner. Here, excellence and prestige are required.

On June 17, 2018, the 8 winners of the edition 2018 of Prix d’Excellence Relais Desserts have been revealed, elected by over 3000 people from the field (pâtissiers, ice cream makers, caterers, chocolate makers, Meilleurs Ouvriers de France…) and it’s Claire Damon, the only woman winning Prix d’Excellence Relais Desserts 2018 who’s been elected Best in-store pastry chef 2018.

Set rue du bac and boulevard Pasteur, her two stores nicely named Des Gâteaux et du Pain [Cakes and Bread] are the place to be for lovers of good food. We must say that the chef who trained alongside Pierre Hermé at Ladurée, for six years; then in Le Bristol kitchen and Plaza Athénée’s, where she was Christophe Michalak’s sous chef.

It’s in 2007 that Claire Damon decides to open her first pastry store, Boulevard Pasteur, in collaboration with baker David Granger. The rue du Bac address will be later built in 2013.

At Des Gâteaux et du Pain, we find viennoiseries and bread (really?) perfectly promoting French bread: flours are mostly organic, without additives and the yeast fermentation time is thoroughly calculated to get the best bread possible.

The same care is given to the sweet creations. At Claire Damon’s, for example, we enjoy the Initiales CD tart with blueberry and cream reminding us of cut-hay. And there’s the Damassé, a surprising mix of an egg tart and a pastel de nata; the Pamplemousse Rosa, a delicious cake based on rose and grapefruit; the pistachio-morello cherry Saint-Honoré, the grapefruit cheesecake and even several pastries with strawberries available in several forms: strawberry baba, strawberry tart with orange blossom water and the now famous J’adore la Fraise.

Each one is more tantalizing than the other and are in a strong line of respecting the seasons and the producers. At Des Gâteaux et du Pain, fruits are thoroughly selected and if they’re not seasonal or not ripe enough, Claire Damon waits the right time, when fruits are full of flavors, to use them.

You can go to Des Gâteaux et du Pain and leaving empty: you have to leave with your arms full of delicious treats!
