Nestled in a quiet street out of the hustle and bustle of La Chapelle, Kube Hôtel Paris new restaurant revisits dishes from yesteryear in a luxuriant nature.

Kube Hôtel Paris new restaurant Après [After] is aptly named. There’s a true before/after you cross the door of this four-star hotel. Before: the urban crowd of La Chapelle-Marx Dormoy area. After: a haven of peace where nature seems to have taken back its rights.

As part of the hotel restoration last November, Kube table has been entirely rethought. New menu, new staff and new decorum. And the address put on a great spread. Exotic wall plants, Chesterfield sofas and army fabric armchairs take us right to the African savanna. A breath of chlorophyll at the heart of the city! Next to the bar where the bartender makes every effort to prepare our cocktail, a pool table makes eye at us before joining our table.

And if in terms of deco, we travel for thousands of kilometers, in the plates, it’s a travel in time that we’re invited to experience. To start the culinary celebration, a homemade terrine, an onion soup or a meagre tartare seasoned with colorful carrots and citrus fruits (€10). We continue with scallops served with a spinach purée and salsifies or a beef cheek bourguignon (tender) and its potato mousseline (€20). More regressive, the boiled chicken with vegetables for two reminding us of our grandmothers’ dishes.

Inspirations mix in a dessert with a smooth French brioche toast with caramel and its refreshing yuzu cream or a more traditional chocolate marquise (€9). The trip wouldn’t be complete without visiting the first floor where nestled the famous Ice Kube Bar, a completely frozen room, where you have one last drink cuddled up in a puff jacket. Guaranteed thermal shock.
